CMT stands out as one of the most exclusive chef knife series ever made. With over thirty years of experience in steel blade technology, we have chosen to use laminated cobalt steel. It is a steel that has proven to be truly durable while offering exceptional cutting performance. In addition to that, its convex edge further enhances these two properties. To achieve a tight and hygienic connection between the guard and the blade, the protection is welded to the tang with a special electrode and then ground to achieve a fine and elegant finish. We then add an exceptionally beautiful garnet micarta that ensures a handle that will last as long as the blade. It is obvious that these knives are completely handmade – no machine can produce such fine knives!
Those who appreciate high-quality handcrafted knives in general will find that this is a series made for them. How to properly use these knives? To begin, we recommend not using them for frozen meat or cutting bones. If you do, you risk the edge breaking or bending, despite their high quality. Cold makes the steel brittle, and this also applies to the most exclusive steels. It is also not a very good chef knife for sawing; instead, use a saw. Finally, never place a good knife in the dishwasher, as it will considerably shorten the knife’s lifespan and could ruin the edge. Get used to hand-washing the knife and drying it before placing it back in its spot.
How do I sharpen CMT knives? Fällkniven recommends their diamond stones. Their experience shows that they develop a really good edge. Diamond sharpeners can be a little difficult at first, but they improve after a break-in period. If you just want to touch up the edge, Fällkniven recommends their ceramic steels, which wear much less on the steel but provide a really sharp edge. Probably the best solution is a combination of these sharpeners, which will also last for several decades.
